Ingredients
- 115 g egg
- 100 g milk
- 165 g all-purpose flour
- 15 g sugar
- 2 g salt
- 1 siphon charger (N2O)
- Shaved black truffle, for garnish
Equipment
Beignet Iron, Beignet Iron Head, Finishing Tray – Medium, Nordic Chefs – SuperFine® Curved Tip Chef’s Tweezers
Method
- Combine the egg, milk, salt, and sugar in a bowl. Blend with an immersion blender until completely smooth and homogeneous.
- Add the flour and blend again until the batter is smooth and free of lumps.
- Pass the batter through a fine-mesh sieve and transfer to a 0.5 L siphon. Charge with one N2O charger, shake well, and refrigerate until ready to use.
- Heat sunflower oil (or other neutral frying oil) to 180C.
- Dispense the batter directly from the siphon into the hot oil, portioning to preferred size.
- Fry until golden brown, then transfer to a Nordic Chefs Finishing Tray to drain excess oil.
- Using chef tweezers, plate shaved black truffle over each beignet just before serving.
Pro Tips for Perfect Beignets Soufflés Rest the batter before frying. A short rest in the siphon (10–15 minutes, refrigerated) lets the charge fully integrate and produces a more even rise. Watch the oil temperature, not the clock. 180C is the target, but oil temperature drops the moment batter hits it — use a thermometer and let it recover between batches rather than frying on a fixed timer. Don't overfill the iron. A slightly smaller portion fries through more evenly than an oversized one; you can always serve two. Drain immediately. Move beignets straight from the oil to a Finishing Tray — resting on paper towel traps steam and softens the shell. Ingredient Substitutions Gluten-free: substitute the all-purpose flour 1:1 with a gluten-free blend that contains xanthan gum; expect a slightly denser crumb. Dairy-free: oat milk is the closest substitute for whole milk in this batter without affecting the whip. No truffle: a few drops of truffle oil worked into the batter, or a Parmesan finish, both hold up well as a lower-cost variation. Storage & Reheating Beignets soufflés are best served within minutes of frying — the hollow structure that makes them light is also what makes them go soft quickly. If you need to hold or reheat, recrisp in a 190C oven or air fryer for 3–4 minutes rather than a microwave, which will collapse the structure. The batter itself can be made up to 24 hours ahead and stored charged in the siphon under refrigeration, so prep can happen the day before service.
