Prepare Meat Mixture:\r\nPlace the minced chicken and salt in a bowl and stir until the mixture becomes tacky.\r\nAdd cornstarch and an egg, then mix well.\r\nAdd the cooled saut\u00e9ed vegetables to the meat mixture. Prepare Noodles:\r\nPlace the noodles in a heat-resistant bowl.\r\nBoil water and pour over the noodles until fully covered.\r\nLet rest for about 10 minutes.\r\nDrain, chop into smaller pieces, and add to the meat mixture once cooled. Folding Wontons:\r\nSet up a station with water, a cutting board, baking sheet with parchment, and the filling.\r\nHold a wonton wrapper in your hand and add a teaspoon of filling.\r\nMoisten the edges with water and fold into a rectangle.\r\nPress the bottom edge and seal the corners.\r\nMake sure there are no openings\u2014see Nina\u2019s folding video on Instagram for reference. Freezing (Optional):\r\nFlash freeze the wontons on a tray where they do not touch.\r\nOnce frozen, transfer to a bag for storage. Cooking:\r\nBring a pot of salted water to a boil.\r\nCook wontons for about 6\u20137 minutes.
