Located in Vejle’s emblematic Fjordenhus, LYST is a result of a dynamic collaboration between Studio Other Spaces, Olafur Eliasson, and Sebastian Behmann.

Every day, our team crafts a distinctive menu, taking inspiration from the current weather, time of year, and local cultivation. Your singular LYST experience will encompass twenty servings, each locally sourced and influenced by the four fundamental elements: air, fire, water, and earth. Expect the dining journey to unfold over approximately 4 hours, or 4–5 hours for larger groups.
