Cold-Set Apple Vinegar Croustade – Chef Arnis

This apple vinegar pie tee is a croustade shell formed on a frozen iron rather than fried in hot oil. The mixture is made from natural apple juice, apple cider vinegar, sugar and agar-agar. After it has been brought to a boil and cooled to room temperature, the shell is shaped directly on the chilled iron.

Freeze the pie tee iron for a few hours before starting. Dip the frozen iron into the apple mixture for around five seconds, lift it out and allow the shell to set before releasing it carefully. The method depends on the iron being properly frozen before it goes into the mixture.

A Cold-Set Pie Tee Shell

Traditional pie tee and croustade shells are usually formed with a heated iron and fried batter. Chef Arnis’ version uses the same idea of shaping a thin shell around an iron, but reverses the temperature: the iron is frozen and the apple-vinegar mixture is allowed to set around it. It is a useful alternative when a menu calls for the shape and precision of a pie tee shell without using the traditional frying method.

What Each Ingredient Does

The apple juice provides the main flavour, while apple cider vinegar gives the shell its acidity. Sugar balances the mixture and agar-agar provides the structure that allows it to set around the frozen iron. Because the method depends on temperature, the iron must be thoroughly frozen before dipping and the cooked mixture should be cooled to room temperature before use.

Apple Vinegar Pie Tee

Ingredienser

  • 300 ml natural apple juice
  • 100 ml apple cider vinegar
  • 40 g sugar
  • 3 g agar-agar

Instruktioner

  1. Freeze the pie tee iron for a few hours.

  2. Combine all ingredients in a saucepan and bring to a boil.

  3. Let the mixture cool to room temperature.

  4. Dip the frozen pie tee iron into the mixture and hold for 5 seconds.

  5. Remove it and allow the shell to set.

  6. Carefully release the pie tee from the iron.
