Looking for a rosette iron?

Choose a complete iron to get started, a six-shape set for more variety, or an extra mold for a compatible handle you already own.

Choose your croustade or rosette iron system

Start with the number of shells you want to make at a time, then choose the mold shape for your dish. Nordic Chefs offers Single, Double and FiveMount systems for professional snacks, filled croustades, rosettes and buñuelos.

Single Iron: one shell at a time

A practical choice for developing dishes, small batches and working with individual shapes. Configure a Single Iron, or explore the Single Rosette Iron.

Double Iron: two shells at a time

Produce two shells in each dip when preparing repeat portions. Check the available mold options on the Double Croustade Iron or Double Rosette Iron page.

FiveMount: five shells at a time

Choose FiveMount when you need to prepare larger batches. Compare the FiveMount Croustade Iron and FiveMount Small Rosette Iron, and check the included handle, attachment and molds before ordering.

Croustade molds or rosette molds?

Croustade molds create shells that can hold savoury or sweet fillings. Rosette and buñuelos molds create decorative shapes for crisp snacks and desserts. Choose the shape and dimensions for your intended presentation, then check its compatibility with your handle or mounting system.

For more focused product guidance, explore our croustade iron guide and rosette iron and buñuelos mold guide.

Complete system, extra mold or replacement part?

  • Starting from scratch: choose a system and review the components included in your selected configuration.
  • Adding a shape: choose an individual mold and check compatibility with your existing setup.
  • Replacing a component: use the Handles & components section to find the required part.

Product images may show a finished setup. The selected configuration and product description determine what is included.

Rosette iron sets: several shapes or several shells?

The 6-Piece Rosette Iron & Bunuelo Mold Set contains six different mold shapes and a handle for working with one shape at a time. The FiveMount Small Rosette Iron has five matching Small Rosette molds for producing five shells per frying cycle. Choose shape variety for menu development, or matching heads for repeated portions.

Recipes and technique

Use our croustade iron technique guide for preparation and release, or follow the buñuelos recipe with Eric Vildgaard from Restaurant Jordnær. Batter consistency, mold temperature and dipping depth all affect the result; follow the instructions for the recipe and shape you choose.

For frying-oil selection, see our oil guide for crisp buñuelos and rosettes. To compare shell styles, read Pie Tee vs Croustade vs Rosette vs Buñuelo.

Croustade and rosette iron FAQ

Can I use the system for both sweet and savoury dishes?

Yes. Choose a suitable batter, mold and filling for your snack or dessert. The recipe links above provide starting points.

Can I add more molds later?

The range includes interchangeable molds and separate components. Check the product description for compatibility before adding a new shape to an existing setup.

Why does the shell stick to the mold?

Check that the mold is properly preheated and that the batter has not covered the top edge of a shell-forming mold. Follow the technique guide for the shape you are using rather than applying one frying time or temperature to every batter.
